Moroccan-Inspired Cauliflower Rice

Filled with flavor, antioxidants, and anti-inflammatory goodness

I used to love making this vibrant dish with couscous, but since removing grains from my diet, I’ve been leaning on cauliflower rice as a light and nourishing alternative. This Moroccan-inspired version is filled with warm spices, antioxidant-rich berries, and fresh green onion for a pop of flavor. It's delicious as a side dish or transformed into a bowl with your favorite protein.

What’s changed most in this season of my life is my mindset.

Instead of focusing on what I can’t have, I’m learning to truly enjoy all the incredible things I can have—getting creative in the kitchen and crafting new, flavorful recipes that make me feel vibrant and satisfied. It’s become a fun challenge, and one that feels very aligned with my journey.

Being vegan for over 20 years definitely prepared me for this next step. Back then, finding plant-based substitutes wasn’t nearly as easy as it is now. I had to get creative, experiment, and reimagine my favorite comfort foods—and that’s exactly what I’m doing now with grain-free cooking. This dish is a perfect example of that evolution.

Ingredients:

  • 1 bag cauliflower rice

  • 1 tablespoon grass-fed butter (or plant-based alternative)

  • 1/4 teaspoon turmeric

  • Dash of sea salt & black pepper

  • 2 green onions, thinly sliced

  • 1/2 cup freeze dried blueberries

  • 1/2 cup freeze dried raspberries

🫶 How to Make It:

  1. In a medium pot over medium heat, melt the grass-fed butter.

  2. Add the cauliflower rice, turmeric, salt, and pepper.

  3. Stir and let cook for about 10 minutes, or until the cauliflower rice is tender and golden.

  4. Remove from heat and fold in the green onions, blueberries, and raspberries.

  5. Serve warm as a side dish—or turn it into a vibrant Moroccan bowl by adding your favorite protein.

My Favorite Combo:
Pair it with wild-caught salmon glazed with orange and a touch of honey. The sweet-savory balance is chef’s kiss and takes the dish to another level. (Vegans can swap in a crispy tofu or roasted chickpeas with orange zest and maple for a similar vibe!) Why You'll Love It:
